- 1 Red bell pepper, diced
- ¼ Red onion, diced
- 1 Habanero pepper, diced (seeds and membrane removed for less heat, if desired)

- 1 Lime, juiced
- 1 tablespoon Olive oil
- ½ teaspoon Salt (or to taste)
- Fresh cilantro, chopped (to taste)
Instructions
- Prep Veggies & Fruit: Carefully dice the mangos, red bell pepper, and red onion into roughly ¼ to ½ inch pieces. Finely mince the habanero pepper and garlic clove. (Wear gloves when handling habanero, if sensitive).
- Combine: In a large mixing bowl, combine the diced mango, red bell pepper, red onion, minced habanero, and garlic.
- Dress & Season: Pour in the lime juice and olive oil. Add the salt. Toss gently to combine all ingredients thoroughly.
- Taste & Adjust: Taste the salsa. Add more salt, lime juice, or habanero if needed to reach your desired flavor.
- Serve: Garnish with fresh chopped cilantro before serving. For best flavor, you can let it sit for 15-30 minutes to allow flavors to meld.
